Cannelloni with ricotta baked in a wood oven
Ingredients for 4 people:
- 24 sheets of cannelloni.
- 500 g of ricotta.
- 2 eggs.
- Grated cheese to taste.
- 70 grams of butter.
- 1 chopped onion.
- Half a cup of oil (EVOO).
- Salt and pepper.
- Parsley to taste, chopped.
- 500mg bechamel sauce.
Preparation:
1 – Cook the cannelloni sheets in boiling salted water according to the package instructions. Drain them and reserve them.
2 – In a frying pan, brown the onion with EVOO, remove from the heat and add the ricotta, the eggs, the cheese, the parsley and add salt and pepper to taste. Mix everything well and reserve.
3 – Prepare the pasta sheets for cannelloni: Spread out on the table, fill with the mixture that we have just made. Set the cannelloni shape if the pasta did not come this way, previously.
4 – Put the cannelloni in a clay pot for the wood oven, cover with bechamel and grated cheese, then drizzle with melted butter and put in the oven.
5 – Leave in the wood oven at a temperature of 240 degrees and leave between 30-40 minutes. And ready to eat!

Cannelloni stuffed with meat

Ingredients for 4 people:

- 500 g of cooked minced meat.
- 1 egg.
- 500 grams of cooked chard.
- Grated cheese to taste.
- 70 grams of butter.
- 1 chopped onion.
- Half a cup of oil (EVOO).
- Salt and pepper.
- Parsley to taste, chopped.
- 500mg bechamel.
- Nutmeg.
Preparation:
1 – Cook the cannelloni plates in boiling salted water according to the package instructions. Drain them and reserve them.
2 – In a pan place the onion with the butter, add the minced meat, the chard and sauté over low heat.
3 – Remove the mixture from the pan and add the egg, cheese, nutmeg, salt and pepper.
4 – Put the mixture on the cannelloni sheets and place in the clay pot.
5 – Cover with the béchamel sauce and place the casserole in the wood oven at a temperature of 240 degrees, for 30-40 minutes. And enjoy!
