Baked walnut and raisin bread recipe

What do you need?

  • A bowl.
  • Banneton basket.
  • Baking fabric.
  • Clay pot for bread.
  • Special beater for dough.

Ingredients:

To make a loaf of bread weighing approximately 800 grams , you will need the following ingredients. If you want to make a different quantity of bread, you will need to adjust the amounts according to the following guidelines.

  • Half a kilo of wheat flour.
  • 290 ml of water
  • 25 gr of fresh yeast.
  • 1 handful of walnuts, to taste
  • 1 handful of raisins, to taste
  • 1 teaspoon of sugar.
  • A pinch of salt, to taste.
  • 45 ml of extra virgin olive oil.

Steps to follow:

To make our walnut and raisin bread , we'll do it in two stages. First, we'll make the bread dough, and then we'll figure out how to bake it.

How to make baked bread dough?

1 – Let's mix in a bowl, salt, flour, sugar and fresh yeast.

2 – We heat the water until it reaches about 37 degrees.

3 – Pour the lukewarm water into the bowl and mix it with the EVOO.

4 – We mix everything well , until it becomes impossible to move the dough, until it is difficult to work with.

5 – On a clean surface , sprinkle a little flour and turn out the dough.

6 – We begin to work the dough with our hands and knead it for approximately 20 minutes. We will be able to see how the dough, which was sticky at first, begins to soften and become more manageable.

7 – When the dough is still sticky, it's time to make a ball with the dough and put it in a bowl or banneton basket to rest.

8 – We leave everything to rest , as recommended, in the banneton basket and cover it with a cotton or linen cloth . At this point, we have to wait approximately two hours.

  • Notes: The banneton baskets, they are ideal for the second fermentation, so that the bread keeps its shape  and do not over-expand. In addition, its design of wickerwork rolled up on itself helps, by sprinkling flour on them before placing the dough, to create a very marked spiral drawing that is very attractive to the eye. 9 – Once the estimated time has passed and it has doubled in volume , it is time to take the dough and put it back on a surface dusted with flour.

10 – With our hands, and especially our fingers, we knead and make circles with our fingers until we reach 1 centimeter in thickness.

11 – Fold the dough over , bringing one end halfway down and the other end completely over the dough. Then, form it into a ball again, and mix in the walnuts and raisins to taste.

12 – We put the mixed dough back into a container with a little olive oil and flour, and cover it, letting it rest for half an hour, in the desired shape.

Preparation of artisanal bread in a wood-fired oven

1 – While we're preparing the dough, it's also time to prepare our oven! If we're using a wood-fired oven, we need to start earlier, light it, and monitor it until it reaches the optimal temperature of around 200º . In the case of an electric oven, simply set the temperature and let it heat up.

2 – We return to the bread and, making a couple of cuts in each piece , we cover it again and put it in the oven , with heat from above and below. In the case of a wood-fired oven, the bread will bake evenly, and if you want it to get that desired crispiness, place a container of water inside to regulate the humidity.

3 – But let's get back to baking our bread! We need to bake the loaf for about 35-40 minutes at 200º. Then, we remove the lid and continue baking for another 15-20 minutes, until the bread is toasted to our liking.

4 – It's time to take your bread out of the oven ! Don't forget to use good heat-resistant gloves ! (We don't want you to burn yourself!) And voilà! Just let it rest for a few minutes until it cools down, and then we can enjoy its flavor with almost all our senses: taste, touch, smell, and sight…
