They are characterized by very slow cooking, thanks to the design of the tajine, which allows the heat to be distributed efficiently inside, making good use of the heat. The conical lid keeps the water vapor that originates from cooking inside the container, and thus the food stays in contact with the steam and better preserves its properties. In addition, being an earthenware container, it withstands heat a lot, so once we finish cooking, if it is left with the lid on, it is able to maintain the temperature for a long time.
