- 600g chicken breast, diced
- 1 ripe natural pineapple, peeled and chopped
- 1 red pepper (optional)
- 1 red onion (optional)
- Skewer sticks (wood or metal)
For the marinade:
- Juice of 2 lemons
- 3 tablespoons of extra virgin olive oil
- 1 teaspoon sweet or hot paprika
- 1 teaspoon ground cumin
- 1 clove of minced garlic
- Salt and pepper to taste
- A touch of honey or brown sugar (optional)
Step by step
1. Prepare the marinade
In a bowl, mix all the marinade ingredients. Add the diced chicken and let it rest, covered, in the refrigerator for at least 1 hour (preferably overnight).
2. Assemble the skewers
Alternate pieces of chicken, pineapple, onion, and bell pepper on the skewers. The contrast of colors and flavors makes the result even more appetizing.
3. Preheat your wood-fired oven
Turn on the oven and let it reach a medium temperature (about 200-250 °C). Ideally, there should no longer be a live flame and only radiant heat should remain.
4. Cook the skewers
Place the skewers on a tray or grill suitable for a wood-fired oven. Cook for a few minutes. 10 to 15 minutes, turning them over halfway through cooking so that they brown on both sides.
